Today marks Day 11 of my WHOLE30.
I'm feeling great and really enjoying the food I've been eating and all the fun I've been having in the kitchen -- both trying new recipes with ingredients I've never really used before and finding ways to put together simple & satisfying meals. Weekends are usually busy around here, especially in the middle of birthday-party planning and bathroom-basement renovating! So this weekend we enjoyed super easy meals that require minimal ingredients. Both are below and would make great weeknight meals also that can be thrown together at a moment's notice.
Saturday Night //
Grilled Chicken, Grilled Zucchini & Fresh Berries
[PALEO / WHOLE30]
All you need for this quick & easy dinner is:
>> 1 boneless, skinless chicken breast per person (try to buy high quality, free-range, organic chicken breasts without antibiotics, hormones, etc.)
>> 1 small to medium-sized zucchini
>> Your favorite berries, fresh and organic if possible
>> Trader Joe's "Everyday Seasoning" Grinder
>> Olive Oil, S+P
Directions:
Season chicken with "Everyday Seasoning" // Grill chicken breasts using outdoor grill or grill pan
Slice zucchini on a diagonal and lightly coat with olive oil and S+P // Grill on outdoor grill or grill pan, 4-7 minutes depending on grill heat [The goal is to have them warmed through and slightly softened without being mushy!]
Rinse fresh berries & slice if desired

Sunday Night //
Grilled Chicken, Garlic Roasted Green Beans & Cinnamon Smashed Sweet Potatoes

This was a hearty & comforting meal that we enjoyed on Sunday night after a long and busy day! It can be put together in less than half an hour and makes great leftovers for the next day's lunch!
All you need for this quick & easy dinner is:
>> 1 boneless, skinless chicken breast per person (try to buy high quality, free-range, organic chicken breasts without antibiotics, hormones, etc.)
>> Green beans, rinsed & trimmed // organic if possible
>> 1/2 cup sliced almonds
>> Trader Joe's "Everyday Seasoning"
>> Garlic Powder, Olive Oil, Pink Himalayan Salt & Pepper
>> 1 small to medium sized sweet potato per person
>> Cinnamon
Directions:
Season chicken with "Everyday Seasoning" // Grill chicken breasts using outdoor grill or grill pan
Peel sweet potatoes and cube into 1-1.5 inch chunks, toss lightly in olive oil or coconut oil and cinnamon
Prep green beans and toss lightly in olive oil, garlic powder, pink salt, ground pepper & "Everyday Seasoning"
On a lined metal baking sheet, spread green beans across one side and sweet potatoes across the other side // Bake at 425 for 20-25 minutes
Once tender, remove sweet potatoes and smash them into chunky pieces and add more cinnamon to desired flavor; serve alongside grilled chicken & garlic green beans
